The Melanzane alla parmigiana is what we know as Eggplant parmigiana. This is a traditional recipe from the south of Italy from which many variants have emerged, but basically the ingredients are aubergines (melanzane), Parmesan cheese, mozzarella, tomato sauce and as an aromatic herb, basil.
